How To Make Butterscotch Eggnog Star Cookies In The Summer….

Hey everyone
I’m feeling so good today. Although I do have a little bit of something like a cold in my system I am going to get it all out. So, anyways I was thinking about how much I love Christmas cookies. I just love them so much. They make you feel the warm feelings of that time. I don’t like making them all the time, because then they wouldn’t be as special when Christmas time comes around, but every now and then we need a Christmas boost. Above is a picture of Christmas cookies that make me feel good, but they aren’t my star cookies. Anywasys, I thought I would share this delicious recipe with you and here it is:
“Butterscotch Eggnog Star Cookies”*
Ingredients: 2 cups all-purpose flour, ½ cup crushed hard butterscotch candies, ½ tsp ground nutmeg, yellow sugar crystals, 2/3 cup softened butter, ¾ tsp baking powder, 1 and ½ cups confectioners’ sugar, 3 eggs, ¼ tsp rum extract, 1 cup sugar, 1 cup Splenda, ¼ tsp salt, ¾ cup heavy whipping cream, and ¾ cup milk.
1) In a saucepan whisk 2 eggs, 1/3 cup sugar, and ½ cup Splenda. Slowly put in ¼ cup milk and ¼ cup heavy whipping cream. Stir over low heat until mixture reaches 160 degrees (a candy thermometer will do).
2) In a large bowl mix the mixture, ¼ tsp nutmeg, ½ cup milk, and ½ cup heavy whipping cream. Place bowl in a larger bowl of ice water, stir until cool. Cool and refrigerate for 3 hours.
3) Grease two foil lined baking sheets with butter flavored cooking spray. In a large bowl cream the butter, ½ cup sugar, and ½ cup Splenda. Beat in one egg and ¼ cup eggnog mixture. In a separate bowl mix the flour, baking powder, salt, and ¼ tsp nutmeg. Slowly add to the butter mixture. Divide the dough in half.
4) On a floured surface, roll dough out to ¼ inch thickness. Cut with a large star cookie cutter. Cut out centers with a tiny star cookie cutter.
5) Place the cookies on the baking sheets. Sprinkle a teaspoon of candy in the center of each. Repeat with the other half of the dough.
6) Bake at 375 degrees for about 7 minutes (until edges are golden). Cool on sheets for 5 minutes. Slide cookies to wire racks for cooling.
7) Mix the confectioners’ sugar, rum extract and just enough eggnog to make a drizzle. Then drizzle over the cookies. Sprinkle with yellow crystal sprinkles.
